I am so excited to share with you my favourite Banana bread recipe!!!
It’s not only damn tasty but healthy!
I love when food tastes good, and when it’s good for the bum.
Prep Time: 10-20 min
Cook Time: 55 min
Serves 1 loaf
Who is this for? Vegeterian, Gluten-free
Ingredients:
- 4 Medium ripe bananas (bananas with lots of brown spots)
- 2 eggs
- 125 ml Olive Oil
- 80 ml honey or pure maple syrup
- 60 ml low-fat/ fat-free plain yogurt
- 1 tsp vanilla extract
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1 tsp ground cinnamon
- 150g wholewheat flour
- 1 tsp baking powder
- 1 tsp baking soda
Cooking method:
- Preheat the oven to 170. Grease your loaf tin with oil spray and if you have baking paper line it.
- Mash the bananas in large bowl with fork. (I do the rest in a mixer as I like saving time and effort)
- Move bananas in mixing bowl. Add the eggs, olive oil, maple syrup, yogurt, vanilla, lemon juice and lemon zest and stir.
- Stop the machine. Sift the flour, cinnamon, baking powder and backing soda over the banana mix. Stir again
- Now your batter is ready to be poured into the loaf tin! Pour the entire mixture into the loaf tin and put into the oven for 55 min.
- Very NB! After the 55 min take out the banana bread and leave to cool for 10 minutes before turning our the bread.
- Very NB! Do not use the stove for additional cooking while the bread is cooking as the stove will not operate at 100% capacity making your cooking time longer for the banana bread.
- If you feel your banana bread is too soft when it comes out, let it stand for 10 min in the stove (when off), take out and let it cool for 10-20 min
