First week back to work, and now I need to readjust to normal work life again.
This means meal prepping the night before.
However, if you were not able to do meal prep the night before don’t fear there are super fast meals you can make to save the day!
This happened to me, I had to think on my feet.

Ingredients:
Avocado
quinoa – 67g
1 can tuna
baby spinach – 1 cup\
Lemon zest to top it off
cherry tomato – 6
Cooking method:
Put everything in a bowl/lunch box, top off with italian seasoning, salt and pepper.
You are good to go.
